Apple Salad with Manchego Cheese & Chives is a darling fall recipe. Sweet-tart apples, buttery cheese, and mild chives in a grassy-lemony dressing. It’s somehow both simple and complex, and at the same time effortless and impressive.

Ingredients
  

  • 4 firm sweet-tart apples
  • 2 tbsp lemon juice divided
  • 4 ounces manchego cheese
  • 2 tbsp extra virgin olive oil
  • 1/4 cup chives chopped

Instructions
 

  • Using a mandoline or knife, cut apples into matchsticks. Toss with 1 tablespoon lemon to prevent browning.
  • Using a mandoline or knife, cut manchego into matschsticks. Toss with apples.
  • Whisk together remaining 1 tablespoon lemon juice and olive oil. Toss with salad. Garnish with chives. Serve immediately (though the apples lose some crispness, I find leftover are still delicious for a couple days).
