- 2 tbsp lemon juice divided
- 4 ounces manchego cheese
- 2 tbsp extra virgin olive oil
- 1/4 cup chives chopped
Using a mandoline or knife, cut apples into matchsticks. Toss with 1 tablespoon lemon to prevent browning.
